try this recipe its awsome and can be made either with sugar substitute or with real sugar and the ADA says that either way you Diabetic readers out there can eat it. Just remember if you make it with real sugar you need to consider it as part of your alotted exchange items and not as an extra. try adding things to the recipe like chocolate chunks, strawberries. or even pumpkin.

Mousse Cheesecake
This cheesecake recipe is easy and absolutely delicious!
2 cups graham cracker crumbs
1/2 cup margarine, melted
1 envelope Knox Unflavored Gelatine
2/4 Cup water
3 packages fat-free cream cheese, softened 30 packets equal or 1 1/4 cup sugar
1 can (5 oz.) evaporated milk
1 tsp. lemon juice
1 tsp. vanilla extract
1 1/2 cup fat-free whipping cream

Combine graham cracker crumbs with margarine. Press onto bottom and up sides of 9" spring form pan or 9x13 pan; chill. In small saucepan, sprinkle gelatine over cold water; let stand 1 minute. Stir over low heat until completely dissolved, about 3 minutes; set aside.

In large bowl, beat cream cheese with equal (or sugar) until fluffy, about 2 minutes. Gradually add evaporated milk and lemon juice; beat at medium-high speed until mixture is very fluffy, about 2 minutes. Gradually beat in gelatine mixture and vanilla until thoroughly blended. Fold in whipped cream. Pour into crust; chill 8 hours or overnight. Makes 12 servings.
